Our Story
Rooted in Origin. Defined by Craft.
Every bag of Don Antonio's coffee traces a straight line back to the farm, the harvest, and the roast profile designed to honor it.
Where It Starts: The Founder
Don Antonio's began with a single conviction — that great coffee is never accidental. It is the result of farmers who tend their land with intention, and roasters who listen to what each bean is asking for. We built this brand to close the distance between those two people and the cup in your hand.
Based out of Florida, we source directly and roast on demand — no warehouse sitting on weeks-old inventory, no guessing at freshness. What arrives at your door was roasted for you.
Our Origins
We don't chase volume. We look for farms producing something worth protecting — a flavor note, an altitude, a processing method that can't be replicated anywhere else. Right now, that search has taken us to four regions.
| Origin | Region & Altitude | Tasting Notes |
|---|---|---|
| 🇺🇬 Uganda | Mt. Elgon, 1,800–2,200m | Dark chocolate, black cherry, earthy depth |
| 🇮🇩 Bali | Kintamani Highlands, 1,200–1,700m | Lemon zest, clean finish, subtle floral |
| 🇰🇪 Kenya | Nyeri County, 1,700–2,100m | Blackcurrant, bright acidity, wine-like complexity |
| 🇵🇪 Peru | Cajamarca, 1,500–2,000m | Milk chocolate, caramel sweetness, smooth body |
The Roast Philosophy
We roast to origin, not to a house profile. That means a Kenya and a Peru will never taste the same — nor should they. High-grown, high-acidity beans from East Africa get a lighter touch to preserve their brightness. Chocolatey, lower-toned South American beans develop longer to coax out their natural sweetness.
Every roast profile is dialed in by cup, not by timer. We cup each batch against our benchmark, and we only release what passes it.
Our Freshness Promise
Coffee has a peak window. We ship within days of roasting — never weeks. Your order isn't pulled from a shelf; it's roasted after you place it. That's the standard we hold ourselves to, and it's non-negotiable.
"Coffee is honest. You can't hide a bad harvest behind a dark roast forever. We'd rather source less and source better."
